Mathanga Vanpayar erisseri

Ingredients

Vanpayar -1 cup
Mathanga – 250 gm
Chili Powder- ¼ tsp
Turmeric powder- ¼ tsp
Grated coconut – 1
Cumin seeds – ½ tsp
Shallots -4
Curry Leaves-1 string
Water
Mustard seeds-1 tsp
Dry red chili-2
Coconut Oil-2tsp

Method

Soak vanpayar for 4 hours or more, wash and cook with chili powder, turmeric powder, salt, curry leaves and water to a pressure cooker and cook. Then remove it from fire and keep aside. When pressure is gone open the cooker and add pumpkin pieces and again pressure cook (2 whistle). Grind grated coconut ½ with cumin seeds and shallots to a paste if need add water to grind. Now open the cooker and add this paste and allow it to boil for few minutes. If need add salt or chili powder. Boil till it reach its semi medium gravy. Heat coconut oil in a pan and add dry chilly, mustard seeds and curry leaves. Saute them and pour this to the curry. Now add rest of grated coconut to the same pan and fry it until golden brown color add this fried coconut to the erissery.
